Here's a meal idea to get your fitness plans back on track tonight

It’s carb-free turkey taco night. Who wants in?

IT’S THE START of another week and after the weekend you’ve had you swear that, this time, it’s going to be different. You’re going to cleanse your system, drop pounds, run faster, lift heavier and it all starts with Carb-free turkey tacos!

Here’s a quick, easy, cheap and (most importantly) low-fat-high-protein way to dose your body with some premium fuel to put you in the mood for a fit and healthy week.

All you need…

Turkey mince, Little Gem lettuce (that’s the small ovally-shaped one), garlic, chilli, ground cumin powder, a bell pepper and a lime*.

Go cook

Heat up your frying pan with just a dash of oil. Chop a clove of garlic and a chilli (or more depending on your taste threshold) and add to the pan.

Send in the turkey mince soon after. Grind in your salt, pepper and cumin powder to your taste and let the turkey cook away until it browns a little.

Add in your chopped bell pepper and give everything a good stir and simmer before you take it off the heat.

Plate it up.

Spoon in that delicious smoky, spicy turkey into those handily-shaped Little Gem lettuce leaves.

You should get at least six leaves full of meat from 300g of mince. Squeeze some lime juice over it and start eating.

If you’ve a little more time, feel free to make a little salsa or guacamole to go on top.

*It’s a carbohydrate-free recipe, and more filling than you might expect. But if you feel you really, really need a bit extra in here then add a wholegrain wrap… but we haven’t covered ourselves in glory over the weekend, so no wraps for TheScore.ie.
