The students led by 1-6 to 0-7 at the interval after Waterford man Devine hit the net early on.
Centre-forward Daniel Kearney played a key role as Sarsfields pressed into the lead in the second-half, scoring four points to propel his side to victory.
In the night’s other quarter-final replay, Imokilly were 1-22 to 4-12 winners over Erins Own.
Stephen Horgan and Maurice O’Carroll bagged a pair of goals each for Erins Own, but five scores from Cian Fleming and an Ian Cahill goal helped Imokilly over the line.
