The thought of making a dinner when you come home in the evening is nauseating and the temptation to lob a pizza in the oven all too seductive.
But before you do so, why not consider this oh-so-simple soup recipe.
Why? It requires little work, few ingredients, it’s damn tasty, and it’s bloody good for you…

Ingredients for 4-6 servings
150g medium rice noodles
Litre of chicken stock
3 cloves of garlic, peeled and crushed or finely grated
4 x slices of unpeeled root ginger
300g chicken breast sliced thinly
2–3 tbsp fish sauce
Juice of 1 lime or ½ lemon
4 spring onions, trimmed and sliced at an angle
Method
1. Place the noodles in a bowl, cover with boiling water and allow to soak until softened.
2. While they’re soaking, place the stock in a saucepan with the garlic and ginger. Bring to the boil.
3. Add the chicken and cook for two minutes until the chicken is opaque.
4. Add the fish sauce and lime juice to taste.
5. Add in the spring onions and coriander.
6. Drain the noodles and divide between bowls, top with the soup and serve.
7. Enjoy
