The Tipperary-born starlet had attracted interest from a number of clubs in Britain. He played for Chelsea in a youth tournament last year, while he was also offered trials by both Man United and Man City, according to the Daily Record.
Coffey has joined the Scottish champions from Nenagh AFC, signing a three-year deal with his new club.
The 16-year-old will link up with Celtic’s development squad ahead of the 2017-18 season.
The youngster’s brother Andrew is a member of the Tipperary U21 team, while his sister Maeve has also played camogie at inter-county level.
The midfield playmaker has also represented Ireland at underage level, helping the Boys in Green win the Victory Shield in Edinburgh last year.
